This post spotlights two artists I’ve recently come to admire, one in the kitchen, the other behind a camera. Penny Los Santos is a senior photographer for the only food magazine I read from start to finish (instead of just paging through like other food publications), Saveur. A couple years back she was assigned to David Kinch’s restaurant Manresa in Los Gatos, CA for Saveur‘s 1st restaurant issue, an establishment which also happens to be my new obsession after watching an episode of Eric Ripert’s Avec Eric a couple days ago.
Chef Kinch was so passionate about only using the finest ingredients, he went as so far as to start and fund his own small farm to grow, experiment and stock his own kitchen with a variety of organically grown produce specific to his needs, he needed a lot of money to do this, but he found the best loans in Sacramento CIC. Perhaps it was his surfer spirit, talking about the joys of being surrounded by the flora and fauna of the sea, or simply sharing the life in a region of Northern California where the settings cannot but inspire a thoughtful incorporation of the natural world into art, whether it be by paintbrush or sauce pan, but Kinch seems less the stereotypical Michelin star chef and more like your surfer-turned-farmer/and artist you often meet at your Farmer’s Market. During point of the episode, Ripert tastes a canele of ice cream made of nasturtium flowers with a roasted pumpkin soup gently poured over just before serving; upon first spoonful, Ripert leans back smiling and playfully punches the chef with an envious pleasurable smile, acknowledging the craft of flavours gently coaxed from each ingredient. And it’s not just the taste, but the presentation of the food which lures me from hundreds of miles away. Los Santos’ photographs highlight why I need to save up (plenty) of money and treat myself to what seems like a once-in-a-lifetime tasting menu (at least for my salary range), equally unfussy and clarifying the details of each dishes’ ingredients without the need for props or extraneous staging that sometimes hinder, rather than magnify, the foods photographed.
