Huh, Nordic cuisine. IKEA food court, this is not! RenĂ© Redzepi was named world’s greatest chef, and after listening to his interview with NPR and his commitment to cooking with locally foraged food, I’m intrigued to taste some of these gastronomic creations presented with the careful eye of a minimalist aesthete. Food should always looks so honest, so beautiful, like the tartare of beef and wood sorrel, tarragon and juniper shown above.
